Crusted Lamb Rack with Saddleback Potatoes

Ingredients

  • 8-10 Potatoes, halved
  • 2 Tbsp Olive Oil
  • 2 skinless Lamb Racks, trimmed
  • 2 cups fresh Breadcrumbs
  • ½ c Select Mustard and Herb Sauce
  • 2 Tbsp each: chopped Thyme, Rosemary
  • Salt and freshly ground pepper

Method

Preheat the oven to 200°C. Boil the potatoes until almost tender

(about 10 minutes). Drain.

Place the potatoes on a board and cut slices along each one, taking care not to cut right through. Place them in a medium roasting dish and drizzle over the olive oil.

Cut the lamb racks in half. Combine the breadcrumbs, mustard and herb sauce, thyme, rosemary and salt and pepper and pat the mixture over the lamb.

Place the lamb in the same dish as the potatoes and bake for about

20 minutes for medium lamb.
