Thai Prawn Green Curry

Thai Prawn Green Curry

Ingredients

  • 2 tsp Olive Oil
  • 1 Onion, coarsely chopped
  • 2 Tbsp Gourmet Garden Fresh Blends Thai
  • 2 Tbsp Green Curry Paste
  • 270ml can light Coconut Milk
  • 1/3 c Water
  • 1 Tbsp Fish Sauce
  • 1 Red Capsicum, thinly sliced
  • 500g Green Prawns, peeled and tails intact
  • 100g Green Beans, trimmed and halved
  • 100g Sugar Snap Peas, trimmed
  • Steamed Rice and Lime wedges to serve

Method

Heat olive oil in pan and cook onion for 5 minutes or until it softens. Add Gourmet Garden Fresh Blends Thai and green curry paste, cook until fragrant.

Add coconut milk, water, fish sauce and red capsicum. Simmer for 10 minutes or until thickened. Add green prawns.

Add green beans and sugar snap peas. Simmer for about 5 minutes or until prawns are just cooked through. Serve with steamed rice and lime wedges.
