Ginger & Honey Lamb Racks with Lemon Couscous

  • 1 Tbsp Oil
  • 1 Tbsp Soy Sauce
  • 2 Tbsp Lemon juice
  • 2 tsp Honey
  • 2 tsp grated Ginger
  • 2 cloves Garlic, crushed
  • 2 Lamb Racks, with 6-8 cutlets on each

Lemon Couscous

  • 1½ c Pearl Couscous
  • 2 Tbsp Lemon Juice
  • ¼ c chopped fresh herbs (eg, coriander, mint, chives)
  • salt and freshly ground pepper to taste


Combine the oil, soy sauce, lemon juice, honey, ginger and garlic in a glass or ceramic dish. Add the lamb racks and turn to coat them evenly in the marinade. Cover and refrigerate for 30 minutes, or overnight if time allows.

Preheat a hooded barbecue on high. Remove the lamb racks from the marinade and place them on the barbecue rack over an indirect heat. Reduce the heat to medium.

Cook the lamb for 20 minutes, or until it is cooked to your liking. Turn halfway through cooking and baste occasionally with the marinade. Remove the racks from the barbecue, cover them with foil and rest for 5 minutes.

Meanwhile, cook the couscous according to the directions on the packet. Drain the couscous and add the lemon juice and chopped herbs. Season to taste with the salt and pepper. Cut the lamb racks in half and serve them with the couscous and a green salad.

Diabetes Friendly. Have only a small serve of couscous, unless you are counting carbohydrates.
