Lemon and Herb Roast Chicken

Ingredients

  • 100g Butter, softened
  • 2 tsp Paprika
  • 2 Garlic Cloves, chopped
  • 2 tsp Fresh Herbs, chopped eg. thyme, rosemary, parsley etc
  • Selection of Stir Fry Vegetables eg. beans, sweetcorn, capsicum etc
  • Salt
  • Pepper to Season
  • Fresh Parsley, curly
  • 100g Cream Cheese
  • Juice and Zest of 2 Lemons
  • 1 Chicken, in even portions

Method

Mix all ingredients (except chicken) together. Carefully lift the skin on each portion. Push the filling under the skin and place on a baking tray. Roast for 35 minutes on 200c until cooked through (no pink juices). Serve with fresh stir-fry vegetables.
