Chocolate, Ginger & Caramel Slice

Ingredients

  • 150g Butter, softened
  • 1/3 c Sugar
  • ½ tsp Vanilla Essence
  • 1½ c Flour
  • ¼ c Cocoa
  • ½ tsp Baking Powder
  • Caramel
  • 395g can Condensed Milk
  • 2 Tbsp Golden Syrup
  • ¼ c Brown Sugar
  • 75g Butter
  • 2 tsp Ground Ginger
  • ¼ cup roughly chopped crystallised Ginger
  • 250g Dark Chocolate for topping

Method

Preheat the oven to 180ºC. Line an 18cm x 28cm pan with baking paper.

Cream the butter and sugar with an electric beater until the mixture is light and fluffy. Add the vanilla essence. Sift over the flour, cocoa and baking powder. Mix together until combined.

Press the chocolate mixture into the base of the prepared pan and smooth the top with the back of a spoon. Bake in the preheated oven for 10 minutes, then remove and set aside.

To make the caramel topping, place the condensed milk, golden syrup, brown sugar, butter and ground ginger into a saucepan. Stir over a medium heat until the caramel mixture is well combined and starting to thicken.

Sprinkle the crystallised ginger over the hot base. Pour over the caramel topping. Bake for a further 10-15 minutes until golden. Set aside to cool.

Melt the chocolate according to the packet directions. Spread the chocolate in an even layer onto the cooled slice and refrigerate until set. Before the chocolate layer sets, mark the slice into squares with the tip of a knife. That way the slice will cut cleanly into squares without breaking. Cut into squares to serve.
