Stuffed Wrapped Chicken Breast

  • 2 Tablespoons butter
  • 2 Tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 2 Tablespoons fresh thyme leaves
  • zest of 1 lemon
  • 12 rashers streaky bacon
  • 6 Brussels Sprouts, halved, halves thinly sliced
  • salt
  • freshly ground black pepper
  • 2 large skinned, boned chicken breast
  • 500ml Campbells chicken stock
  • 2 Tablespoon cornflour dissolved in 4 tablespoons cold water


Preheat the oven to 200°C.

Heat the butter and oil over moderate heat in a small frying pan. Add the onion, garlic, thyme, zest and two rasher of the bacon thinly sliced. Fry gently without browning for 5 minutes until the onion is soft. Add the Brussels Sprouts and fry a further 3-4 minutes. Taste and season. Remove from the heat, cool and reserve. This is the stuffing.

Put the chicken on a clean surface, skin side down. Make slices into the thick part of the meat but not all the way through so that the chicken can open out into a larger flatter piece of meat.

Gently flatten with a meat hammer or rolling pin until the chicken is an even thickness.

For each breast, lay 5 of the remaining rashers of bacon side by side, but touching, on to a piece of glad wrap. Place the chicken, former skin side down on top.

Place half of stuffing in the middle of the chicken and roll up so you have a tight sausage shape wrapped in bacon. Place in the fridge for 30 minutes.

Remove the cling film and place chicken on oven tray, place in the oven for 20 minutes.

Remove from the oven, reserving the cooking juices.

Cover the chicken with tin foil and rest in a warm place while you prepare the sauce..

To make the sauce, pour the stock and reserved chicken juices into a small saucepan and bring to the boil. Add enough of the cornflour mixture to thicken lightly. Taste and season.

Slice the chicken thinly and drizzle sauce over top. Serve with mash and your favourite seasonal vegetables


1. To wrap the chicken perfectly in the bacon; lay the bacon strips on some cling film, then roll and wrap.
