Kumara & Prawn Fritters

Serves 4
Ingredients
- 1/3 cup Self Raising Flour
- 1/3 cup Rice Flour
- Salt
- Pepper
- 2/3 cup Coconut Cream
- 1 Medium Kumara
- 300g Raw Prawn Meat, diced
- 1 tbsp fresh Ginger, grated
- Small handful of fresh chopped Coriander
- 2 tbsp Thai Sweet Chilli Sauce
- Oil for frying
Method
Combine Self raising flour and rice flours in abowl, seaosn with salt and pepper.
Mix in coconut cream to make as moooth, thick batter, then add the grated kumara and grated ginger.
Mix in prawns, coriander and sweet chilli saice, season ansd rest for a few minutes.
Heat some oil in a pan or on a BBQ plate.
lightly fry spoonfuls of th batter, turning once first side is cooked.
serve with sweet thai chilli sauce.
