Steak Stacks and Spiced Wedges

Ingredients

  • 4 Steaks, eg: Rump
  • 2 Garlic Cloves, finely chopped
  • 1 Onion, sliced into rings
  • 1 tsp each, paprika, garlic powder, coriander, cumin, garam masala
  • Pepper to Taste
  • 1 tbsp Olive Oil, plus extra to cook
  • 2 tbsp Plain Flour
  • 4 Large Potatoes, cut into wedges
  • 2 Hamburger Buns, split in half
  • 4 tbsp Mayonnaise
  • 2 Vine Ripened Tomatoes, sliced
  • 4 Pineapple rings, grilled
  • 1 tbsp Soy Sauce
  • 1 tsp Chilli Paste
  • 125mls Soda Water
  • Lettuce for serving

Method

Place wedges into roasting tray, sprinkle over the spices and drizzle with 2 tbsp soya oil. Place the wedges into a preheated 200c oven and roast 40 minutes until crisp and golden. Heat 1 tablespoon olive oil in a saute pan and add your selected steaks. Cook 3-4 minutes each side for medium. Remove and set aside. Add garlic and soy sauce to pan juices and heat to combine. Place the flour and soda water into a bowl and whisk to make a thin batter. Heat 300mls of soya oil in a saucepan. Dip the onion rings into the batter, and fry a few at a time until crisp and golden. Drain on kitchen paper.

To Build

Toast burger buns and mix mayonnaise and red chilli together. Place burger buns onto serving plates. Top with the lettuce, tomatoes, a slice of grilled pineapple and steak. Pile high with onion rings then drizzle the chilli mayo onto and around the steak stacks. Serve the spiced wedges.
