Chicken & Vegetable Soup

Serves 4
Ingredients
- 2 teaspoons sunflower oil
- 1 x skinless chicken breast fillet
- 1 onion, thinly sliced
- 1 Continental Chicken Stockpot
- 1 large carrot, sliced
- 1 stick celery, sliced
- 1 cup broccoli florets, sliced
- ½ cup Home Brand frozen peas
- 2 tablespoons chopped parsley
Method
Heat oil in a large saucepan and lightly brown the chicken and onion. Mix 2 cups hot water with Chicken Stockpot and add to the saucepan along with carrot, celery, broccoli and peas. Bring to the boil stirring and simmer gently for 5 minutes.
Sprinkle with parsley and serve with crusty bread.
Hint - Snow peas and sugar snaps can also be used in this recipe.
