Chicken & Vegetable Soup

  • 2 teaspoons sunflower oil
  • 1 x skinless chicken breast fillet
  • 1 onion, thinly sliced
  • 1 Continental Chicken Stockpot
  • 1 large carrot, sliced
  • 1 stick celery, sliced
  • 1 cup broccoli florets, sliced
  • ½ cup Home Brand frozen peas
  • 2 tablespoons chopped parsley


Heat oil in a large saucepan and lightly brown the chicken and onion. Mix 2 cups hot water with Chicken Stockpot and add to the saucepan along with carrot, celery, broccoli and peas. Bring to the boil stirring and simmer gently for 5 minutes.

Sprinkle with parsley and serve with crusty bread.

Hint - Snow peas and sugar snaps can also be used in this recipe.
