Mauritian Seafood on Kumara Pancakes

Mauritian Seafood on Kumara Pancakes

Ingredients

  • 1 tsp Paprika
  • 200mls Coconut Milk
  • 1 tbsp Parsley , chopped
  • 1 tsp Butter, plus extra to cook
  • Salt to taste
  • Pepper to taste
  • 3/4 C for Pancakes, 2 Tbsp for Seafood
  • 2 Spring Onions, finely chopped
  • 150mls Milk
  • 2 Eggs
  • 1 tbsp Minced Chilli
  • 2 Large Kumara, peeled and diced
  • 2 tbsp Peach Chutney
  • 300g Large Cooked Prawns
  • 300g Surimi, defrosted and flaked

Method

For The Pancakes:

Cook kumara in a pan of salted boiling water for 15 minutes until soft.

Drain and place in a food processor with remaining ingredients ( flour, eggs, milk, butter, salt and pepper ).

Blend until smooth.

Melt 1 tbsp butter in a saute pan and place large spoonfuls of pancake batter in the hot pan.

Cook 3 pancakes until undersides are golden and tiny air bubbles appear on the surface.

Flip over and cook until golden.

Remove and continue to make pancakes until the batter is used.

For The Seafood:

Mix paprika and flour together. Dust prawns and Surimi with seasoned flour.

Heat 1 tbsp margarine in a large saute pan, add the red chilli and seafood, cook for 1-2 minutes.

Add spring onion, mango chutney and coconut milk.

Bring to the boil and simmer to create a creamy fragrant sauce.

Return seafood and sprinkle in the fresh herbs,

To Serve:

Place 3 pancakes on each plate. Spoon the seafood onto each pancake, drizzling the sauce around the edge.

To Garnish:

Add sprigs of fresh coriander or flat leaf parsley onto the seafood.
