Ingredients

  • 1 1/3 cups plain flour
  • 2 tbsp cocoa
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 cup caster sugar
  • 1 tsp vanilla extract
  • 4 eggs
  • 1/2 cup (125ml) milk
  • 1 ice cream cone (the short stubby cones) with the bottom 2 inches trimmed with a serrated knife
  • RJ’s Natural Raspberry Logs
  • Black licorice strips
  • 6 fruit mentos
  • 1 Tbsp candy stars
  • 6 red lollies
  • 3 cups icing sugar
  • Red food colouring
  • Blue food colouring
  • 200g good-quality dark chocolate, chopped
  • 225g unsalted butter- softened, MAINLAND

Method

Method

• Preheat the oven to 160°C. Grease and line a 23 cm square cake tin.

• Sift the flour, cocoa, baking powder and baking soda into a bowl. Set aside.

• Place the chocolate pieces in a bowl over a saucepan of simmering water until melted. Be careful not to let the chocolate touch the water. Cool slightly.

• Beat butter and sugar until light and fluffy. Then add the vanilla followed by the eggs, 1 at a time, beating well after each addition.

• Pour in the cooled chocolate and beat until well combined.

• Fold in a third of sifted ingredients, followed by a third of the milk. Repeat until all ingredients are incorporated and the mix is smooth.

• Pour the mixture into the pan and bake for 45-55 minutes until risen and a skewer inserted in the centre comes out clean. Cool in the pan on a rack for 10 minutes, then invert onto a rack, remove the baking paper and cool completely.

Trimming the cake

• Trace the shape of the cake tin onto a piece of paper. Using one corner as the tip of the rocket trace a rocket body shape (you’ll use the off cuts to cut triangles for the wings). Cut around the template then use this as guide to cut your cake.

• Place the cake on a clean work surface. Using a bread knife cut out the rocket-ship body shape from your template.

• Use the 2 larger trimmed pieces as the side wings of the rocket. Trim each triangle to make the long edge of each wing straight.

Icing

• In one bowl place 1 cup of icing sugar. Add enough warm water to combine to a not too runny consistency. Add red food coloring. Ice the 2 side wings with the red icing.

• In another bowl place the remaining icing sugar and add enough warm water to combine to a not too runny consistency. Add blue food coloring and tint to a light blue. Spread the body of the cake with the light blue icing.

To decorate the body of the rocket:

• Arrange the rocket body and wings on a platter.

• Press the trimmed ice cream cone into the base of the cake as shown. Cut strips from 2 of the raspberry logs and place into the mouth of the cone so the strips fan out.

• Arrange black licorice strips along the length of the spaceship body, as pictured.

• Press a line of 3 fruit mentos between the laces on either side of the spaceship body.

• Press 5 rectangular red lollies along the bottom edge of the rocket. Press 1 red lolly into the tip of the rocket ship (you may want to use a toothpick to secure it).

• Roll out one raspberry log until quite thin. Cut out a ‘N’ shape and a ‘Z’ shape. Arrange the letters across the centre of the rocket body.

• Sprinkle the candy stars over the platter.
