Chicken Veronique Panini Stack

Ingredients

  • 2 Cloves Garlic, crushed
  • 2 tbsp Cream Cheese
  • 1 tbsp Fresh Parsley, chopped
  • 4 Panini's
  • Crisp Salad Leaves
  • Smoked Chicken Breast, sliced
  • 1 Small Red Onion, sliced
  • 2 C Seedless Grapes, halved
  • 4 tbsp Natural Yoghurt
  • 2 tbsp Roasted Cashew Nuts

Method

Heat 1 tablespoon Olive Oil in a large saute pan.

Saute the fresh chicken breasts until cooked, remove and set aside.

Place the red onion and garlic into the saute pan and saute for 1-2 minutes.

Remove the pan from the heat and mix in the cream cheese to soften.

Place the smoked and fresh chicken, onion and garlic mixture, grapes, nuts, yoghurt and parsley into a large mixing bowl.

Toss to combine and season lightly.

Toast the split Panini's, place onto serving plates and top with a selection of salad leaves.

Spoon the Chicken Veronique onto the salad leaves and garnish with grapes and mint leaves.

Chef's Tip

Fresh peaches, nectarines or plums are also delicious served with this salad.
