French Onion Soup with Cheesy Gruyère Toasts

Cheesy Gruyère Toasts

  • 1 Baguette, sliced
  • Grated edam cheese
  • Grated gruyere cheese

French Onion Soup

  • 1 tbsp Butter
  • 1 tbsp Oil
  • 750g Sliced Onions (approx 4 large onions)
  • 1 tbsp Brown Sugar
  • ½ tbsp Balsamic Vinegar
  • 1 tbsp Flour
  • 1 litre Beef Stock
  • ½ tsp Salt + extra to taste
  • Pinch of Thyme
  • Pepper to taste


Cheesy Gruyère Toasts

Sliced baguette or other crusty bread

Grated cheese for topping, eg, ½ edam and ½ gruyère

Heat the butter and oil in a saucepan and add the sliced onions (I slice mine in the processor). Gently sauté the onions, stirring them frequently until they become soft and golden.

Add the brown sugar and continue cooking until the onions are caramel-coloured. This will take about 20 minutes or more. Stir in the balsamic vinegar and 1 tbsp brandy and cook for a further few minutes.

Mix in the flour and, stirring continuously, add the stock, salt and thyme. Simmer for 10 minutes and season with salt and pepper to taste.

While the onions are cooking, you can prepare the gruyère toasts so they are ready to pop under the grill when the soup is cooked.

Toast the bread slices and cut them into fingers. Sprinkle over the grated cheeses.

When the soup is ready, grill the gruyère toasts until the cheese is bubbling and golden.

Divide the soup between 4 bowls and serve with the Cheesy Gruyère Toasts on the side.
