Healthy Carrot Cake

Ingredients
- 3 Eggs
- 1c Brown Sugar
- 1tsp Grated Lemon Rind
- ½ c Canola Oil
- 1½ c Flour
- 1½ tsp Baking Powder
- 1c Raisins
- 1c Bran
- anchor butter salted
- fresh produce carrots , 1kg loose
Method
Preheat oven to 180ºC
Spray the bottom and sides of a ring baking tin with a little oil then sprinkle with 1tbsp of grated carrot
Place the eggs and brown sugar in a bowl and beat until smooth, add the lemon rind and oil
Sift the flour and baking powder into another bowl, add the bran, remaining grated carrot and raisins
Mix the flour mixture into the oil mixture, then spoon into prepared baking tin.
Place in preheated oven and cook for 25-35 minutes until the middle comes out clean when pricked with a skewer.
