Heart Protecting Salmon & Salsa Salad

Ingredients

  • 1 Tomato, cored and diced
  • 2 tbsp Avocado Oil
  • 1/2 Red Onion, finely chopped
  • Fresh Italian Parsley, fine chopped
  • 4 pieces Salmon Fillet, boned
  • Zest and Juice of 1 Lemon & Lemon Wedges for squeezing
  • 4 tsp Basil or Rocket Pesto
  • ½ Red Capsicum, finely chopped
  • 1 bunch Broccolini, thick ends of stalk cut off

Method

Pre-heat oven to 200°.

Put the tomato, onion, capsicum, zest, juice, parsley and oil into a large salad bowl, mix well.

Steam the broccolini until al dente. Remove. Reserve.

Put the salmon on an oiled ovenproof tray, fresh side up.

Spread one teaspoon of pesto.

Place in the oven for 10 minutes or until the slamon is just cooked through.

Remove from the oven and serve on the broccolini and salsa salad with lemon wedges on the sides
