Broccoli with Sausages, Roasted Peppers and Penne

Serves 4-6


  • 1 Onion, finely chopped
  • 1/2 c Chicken Stock
  • 6 Signature Range Alpine Sausages, sliced 3 cm
  • 4 tbsp Olive Oil
  • 4 tbsp Olive Oil
  • 1 Large Head Broccoli
  • 2 Red Capsicums, roasted, cored, seeded and sliced
  • 400g Penne Pasta
  • Parmesan Cheese for sprinkling


Heat the oil over moderate heat and add the onion and sausages.

Fry until everything is browned, the onion is soft and the sausages cooked.

Remove central stem from broccoli head, cut head into small florets,drop into boiling water, bring back to the boil, and boil for 2 minutes, drained well.

Cooked penne pasta until al dente or tender to the bite in plenty of well salted boiling water, drain well

Add the stock, capsicums, broccoli and hot penne, mix well and gently fry until everything is hot.

Season with salt and pepper and serve with plenty of freshly grated parmesan
