Hot Smoked Salmon Fettuccine with Vine Tomatoes

  • 2 Vine Tomatoes
  • Salt to taste
  • Pepper to taste
  • 2 x 400g pks Fresh Fettuccine
  • 150g Hot Smoked Salmon Nuggets
  • Pasta Sauce
  • 3 tbsp Olive Oil


Preheat the oven to 190°C.

Gently wash the vine tomatoes and pat dry with a tea towel. Place on an oven tray and with a pair of scissors, cut each tomato into three equal portions. Drizzle with oil.

Season with salt and pepper and place in the oven for 10 minutes.

Meanwhile, fill the largest pot you have with water, add about a tablespoon of salt and a dessertspoon of oil. Bring to the boil.

In a medium saucepan, gently warm the salmon sauce.

Place the pasta into the boiling water, untangling as you go.

Simmer, uncovered, for 3 minutes and drain well. Place the pasta back into the cooking pot and add the warm salmon sauce and the hot

smoked salmon nuggets and gently stir.

Serve the pasta with the tomatoes.
