Roast Pork with Apple and Red Onion Gravy

  • 1 tsp Flaky Sea Salt
  • 8 Small Red Onions, peeled and halved
  • 1 c Chicken Stock
  • 1 tbsp Cornflour
  • 1/2 c White Wine
  • 2 tbsp Brown Sugar
  • 2 tbsp Brown Sugar
  • 2 tbsp Balsamic Vinegar
  • 2 tbsp Olive Oil
  • 2 Apples, peeled, cored and sliced thickly
  • Pork Shoulder Roast, bone in or boneless


Preheat the oven to 180°C.

Put 1 tablespoon of the oil into a small roasting pan.

Lift the elastic net which covers the pork, slice the fat in parallel lines down to the flesh then replace the net.

Put pork into roasting pan. Make small incisions all over pork and push a slice of garlic into each. Put a sprig of rosemary on each side of the pork. Sprinkle the salt onto the fat on top of roast.

Place in oven for 2 hours and roast until well cooked.

In separate small roasting pan, put remaining oil, onions, apples, wine, balsamic and sugar. Mix well. Cover and place in oven and bake 1 hour.

Uncover and bake a further 15 minutes then remove from the oven and reserve.

When the pork is cooked, remove from oven, discard the rosemary, place pork on heatproof plate and keep warm.

Pour fat from pork pan and place the pan over moderate heat.

Add chicken stock, bring to boil and whisk in cornflour dissolved in 3 tablespoons cold water so it thickens slightly. Add onion mixture from the other pan, mix well, simmer one minute, taste and season with salt and pepper then remove from the heat.

Serve the pork, sliced, with the onion mixture on the side.

Good with mashed potatoes and salad.
