Fire Glazed Chicken with Spicy Plums and Pasta

Ingredients

  • 4 Boneless Chicken Breasts or legs
  • 1 tsp Chinese Five Spices
  • 2 tbsp Butter
  • 500g Pasta eg: Fettuccine
  • 2 tbsp Maple Syrup
  • 1 tsp Chilli Seasoning
  • 2 tbsp Soy Sauce
  • 6 Plums

Method

Mix together the maple syrup, soy sauce and spice.

Marinate the chicken for 30 minutes.

Then bbq or pan-fry, allow 10-15 minutes for the breasts or 20-25 minutes for the legs.

For the Plums:

Halve and de-stone the plums, heat the butter in a saute pan. Add the plums, cut side down, and allow to cook for 2-3 minutes. Turn and sprinkle with chilli. Cook for a further 3 minutes.

For the Pasta:

Cook 2/3 of the pasta in plenty of salted boiling water, until tender to the bite. Drain and toss through the butter, season and stack onto serving plates. Add the chicken and plums. Pour any plum juices over the pasta.
