Thai Green Coconut Noodle Soup

Ingredients

  • 300 g Chicken Stir Fry
  • Thai Green Curry Paste
  • 1 cup Coconut milk
  • 1 1/4 c Chicken Stock
  • 75g Green Beans, sliced lengthways
  • 1 Courgette sliced
  • 1 Small Bunch Bok Choy, stalks sliced, leaves cut in half
  • 175g Long Life Singapore Noodles
  • 2-3 Spring Onions, sliced
  • 1 tbsp Basil, freshly chopped
  • Salt
  • Pepper

Method

Heat a wok or a deep frying pan with a dash of oil and stir fry Tegel chicken until golden. Add Thai Green Curry Paste and cook stirring for 2 minutes

Add coconut milk, chicken stock, green beans, courgette and bok choy stalks, simmer gently until tender, about 4-5 minutes.

Add noodles, bok choy leaves and spring onions, cook for a further 2-3 minutes, add basil and season with salt and pepper.

Serve immediately.
