Spinach & Goats Cheese Lasagne

  • 18 Baby Roma Tomatoes, halved
  • Salt
  • Freshly Ground Black Pepper
  • 2 Garlic Cloves, finely chopped
  • 150g Baby Spinach
  • 2 c (500mL) Vitasoy Calci-Plus High Fibre
  • 12 x 12cm Squares Fresh Lasagne, cooked
  • 40g Baby Rocket
  • 150g Goat’s Cheese, crumbled
  • 1 Leek, halved lengthways, washed, thinly sliced
  • 1/2 c (40g) Freshly Grated Parmesan
  • 2 tbsp Plain Flour
  • 40g Butter
  • 1 tbsp Olive Oil, extra to drizzle


Preheat oven to 150°C.

Place the tomatoes cut-side up on a baking tray.

Season with salt and pepper and drizzle with olive oil.

Bake for 50 minutes.

Heat 1 tablespoon of olive oil in a frypan over medium-low heat.

Add the leek and garlic and cook for 2-3 minutes, until softened.

Add the spinach and cook for 2 minutes or until it just wilts.

Season with salt and pepper.

Melt the butter in a medium saucepan.

Add the flour and cook, stirring constantly for 1 minute.

Quickly whisk in the Vitasoy Calci-Plus High Fibre and continue whisking over the heat for 4 minutes or until the sauce comes to the boil and thickens.

Season with salt and pepper and stir through the parmesan.

To assemble the lasagne, place a lasagne square on each plate and spread the spinach mixture over each.

Top with another lasagne square, then the rocket and tomatoes.

Place a final lasagne square on top. Drizzle generously with the Vitasoy Calci-Plus High Fibre sauce and sprinkle with goat’s cheese.

Note: If baby roma tomatoes are unavailable, use cherry tomatoes instead.
