  • 2 c Vitasoy Lush Chocolate
  • 300ml Thickened Cream + extra cream to serve
  • 3 tsp Powdered Gelatine
  • 3 tsp Instant Coffee
  • 1/2 c Caster Sugar


Place the Vitasoy Lush Chocolate, cream, sugar and coffee in a large saucepan and bring to the boil. Remove from the heat and allow to cool for 5 minutes.

Sprinkle over the gelatine and whisk until dissolved. Allow the mixture to cool, then cover and place in the fridge. Remove every

10 minutes and whisk for 1 minute.

Continue to do this until the mixture coats the back of a wooden spoon.

Divide among six 3/4-cup (185mL) capacity dariole moulds. Cover and place in the fridge overnight or until set.

To serve, run a knife around the edge of each mould and turn out the panna cotta onto serving plates.

Serve with cream and strawberries, if desired.
