Green Curry Chicken

Ingredients

  • 500g Chicken Tenderloins, diagonally cut into strips
  • 2-3 tbsp (about 50g) Thai Green Curry Paste
  • 140mL can Coconut Cream
  • 1 c (250mL) Vitasoy Calci-Plus
  • 225g can Sliced Bamboo Shoots, drained, rinsed
  • Steamed Jasmine Rice, to serve
  • 125g Baby Corn
  • 1 tbs Fish Sauce
  • 1 tbs Vegetable Oil
  • 100g snow peas
  • 1/2 cup fresh Thai basil leaves

Method

Heat the oil in a wok.

Add the chicken and curry paste, and cook over medium heat, stirring constantly for 5 minutes or until seared all over.

Add the coconut cream, Vitasoy Calci-Plus and fish sauce and bring to the boil, stirring occasionally.

Add bamboo shoots and corn and cook for 5 minutes or until corn is just tender.

Remove from heat and stir in 100g snow peas and 1/2 cup fresh Thai basil leaves.

Serve with rice.
