Lemon & Garlic Fish

Ingredients

  • 500g White Fish Fillets
  • 1 tbsp Lemon Juice
  • 1 Garlic Clove, finely diced
  • 1 Onion, thinly sliced
  • 3 -4 Tomatoes, seeded & diced
  • 1 Zucchini, sliced (optional)
  • Salt to taste
  • Pepper to taste
  • 1/2 c Unsweetened Tomato Juice
  • 1 c Kelloggs Special K
  • 1/2 c Grated Tasty Cheese
  • 1/2 tsp Brown Sugar

Method

Preheat ove to 180 degrees C

Remove skin from the fish (cut large fillets in half)

Place in a shallow oven proof casserole dish.

Drizzle over lemon juice.

Top with garlic, onion, tomatoes and zuchinni.

Sprinkle with salt, pepper and sugar.

Pour over tomato juice.

Combine Kelloggs Special K and cheese.

Spread evenly over fish.

Bake in a moderate oven (180 degrees) for 30 minutes or until fish flakes easily when tested with a fork.

Serve with a green salad.
