Beef in a Red Wine Marinade

Ingredients

  • 1 c Red (or white) Wine
  • Bay Leaf
  • Thyme Sprig (if available) or use rubbed
  • Parsley Sprig + 4 Sprigs for the Roast Beef
  • Freshly ground black pepper to taste
  • 4 Garlic Cloves
  • 3 Rashers Bacon, chopped
  • Freshly Ground Salt and Pepper to taste
  • 6 Pickling Sized Onions, halved
  • 1 c Beef Stock
  • 4 Portabello Mushrooms
  • 3 Slices Lemon
  • 1 tbsp Select Olive Oil for marinade + 1 tbsp for Roast Beef
  • 4 Tomatoes
  • 1.5 kg Topside Roast Beef

Method

Combine

1 cup red (or white) wine

1 each: bay leaf, thyme sprig, parsley sprig

3 slices lemon

1 Tbsp Signature Range Olive Oil

Freshly ground black pepper to taste

Place the beef in a bowl with the marinade. Cover and refrigerate for about 12 hours, turning occasionally.

Preheat the oven to 150°C.

Finely chop the garlic and tomatoes.

Quarter the mushrooms.

Coarsely chop the parsley.

Heat the oil in a heavy pan suitable for the hob and oven.

Sauté the bacon, until crisp. Remove to one side..

Drain the beef and pat dry. Season with salt and pepper.

Brown the beef on all sides. Remove and place the bacon, garlic, tomatoes, mushrooms, parsley and onions in the pan.

Place the beef on top. Strain the reserved marinade over the top. Cover and cook in the oven for 2 & 1/2 hours.

Serve sliced with the vegetables and juices
