Slow Cooked Beef Topside with Red Wine and Mushrooms

Ingredients

  • 6 Baby Onions, peeled
  • 100g Bacon, chopped
  • 3 Garlic Cloves, thinly sliced
  • 2 Carrots, peeled and sliced
  • 1/2 c Black Olives
  • 1 1/2 c Red Wine
  • 2 tbsp Tomato Paste
  • 1 1/2 c Beef Stock
  • Salt to Taste
  • Pepper to taste
  • Chopped Parsley for Garnish
  • 3 tbsp Olive Oil
  • 5cm Piece Orange Peel, no pith
  • 1.3kg Topside Roast
  • 300g Button Mushrooms

Method

Preheat the oven to 190°C.

Heat the oil in a metal casserole dish just big enough to hold everything.

Brown the beef all over, remove from the casserole and reserve.

Add the onions to the casserole and brown them, add the bacon, garlic, orange peel, olives and mushrooms and fry until bacon is cooked.

Place the beef back in the casserole with the other ingredients around it.

Turn the heat up and add the wine. Let it bubble for 30 seconds.

Mix the tomato paste with the stock and add it to the casserole.

Cover and place in the oven for 2 1/2 -3 hours or until the beef is very tender.

Remove from the oven and let it stand for 5 minutes.

Put the beef into a serving dish.

Put the casserole onto the heat and bring to the boil.

Taste and season with salt and pepper.

Slice or simply break the beef into pieces and pour the sauce over it.

Sprinkle with chopped parsley.

Good with rice or mashed potatoes and a green salad to follow.
