Ganesh's Minestrone "Not" Soup

Serves 8
Ingredients
- 2 Tbsp olive oil
- 4 rashers of streaky bacon, chopped
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 large potato, peeled and chopped
- 800g tinned tomatoes, whole or chopped
- 1L vegetable stock
- 400g cannellini beans
- tsp dried mixed herbs
- 100g penne pasta
- 250g silverbeet, chopped
- 1kg frozen mixed vegetables
- Salt and pepper, to taste,
- 200g Parmesan cheese, to serve
- Fresh herbs, to serve
Method
1. Heat oil in a saucepan over medium heat. Fry the chopped bacon until it starts to colour, add in the onions and cook until translucent and soft. Add the garlic, cook for 2 minutes.
2. Add the chopped potatoes, canned tomatoes, stock, canned beans and dried herbs.
3. Bring to a boil and simmer for roughly 20 minutes. Add in the pasta and silverbeet. Cook for 10 minutes or until the pasta is cooked.
4. Add the frozen vegetables and season to taste. Check the consistency of the minestrone. If it needs a little stock, add it now.
5. Serve with grated Parmesan and fresh herbs on top.
