Ingredients

  • 1 C Cherry Tomatoes, halved
  • 1/2 C Kalamata Olives
  • 1 Handful Rocket Leaves
  • Zest and Juice of 1 Large Lemon
  • Salt
  • Black Pepper, freshly ground to taste
  • 3 Spring Onions, thinly sliced
  • 1/2 C Roasted Almonds, chopped
  • 200g Signature Range Penne Pasta
  • 250g Signature Range Surimi Salad Mix, thinly sliced

Method

Boil the pasta until al dente in plenty of well salted boiling water, drained, tossed with 4 tablespoons Signature Range olive oil and cooled.

Put everything into a large salad bowl and toss well, seasoning to taste with salt and pepper.
