Tomato and Chorizo Salad

Tomato and Chorizo Salad

Serves 4
Ingredients
- 1/2 French loaf, cut into bitesized cubes
- Salt
- Black Pepper, freshly ground
- 1 tbsp Parsley, chopped
- 4 handfuls Mesclun salad mix
- 4 Sweet Delight tomatoes,
- 3 tbsp Red Wine Vinegar
- 2 Spicy Chorizo Sausages, thinly sliced
- 2 tbsp Parmesan, finely gratedesan
- 5 tbsp Olive Oil
Method
Preheat the oven to 200°C.
Put the bread onto an ovenproof tray and add 2 tablespoons of the oil.
Season well with salt and pepper and mix well.
Place in the oven for about 5 minutes until the bread is
crisp and golden. Remove from the oven, put into a mixing bowl, add the parmesan and parsley and mix well.
Add Mesclun and tomatoes.
Heat the remaining 3 tablespoons of oil over moderate heat. Add the sliced chorizo and gently fry until browned and crisp.
Remove from the heat and carefully add the vinegar. Be careful, it may spit.
Pour this mixture over the salad, mix well and serve immediately.
