  • 12 Slices Tomato
  • 2 Single, Boneless Chicken Breasts (about 250g each
  • 4 Black Olives
  • Salt
  • Black Pepper cracked
  • 2 handfuls Baby Salad Greens
  • 8 slices Traditional Bread
  • 4 Lemon Wedges
  • 1/2 C Mayonnaise
  • 2 Tbsp Olive Oil
  • 2 large Hass Avocados, peeled stoned and sliced
  • 4 Bamboo Skewers


Preheat the oven to 200°C.

Rub the oil all over the chicken breasts and place them in a small roasting dish.

Season well with salt and pepper and roast for 15-20 minutes until golden and cooked through.

Rest in a warm place for 5 minutes then slice.

To make the sandwiches, toast the bread and spread one piece of toast with mayonnaise.

Place some baby salad greens on top of the mayonnaise and then add a quarter of the sliced chicken, 3 tomato slices and half a sliced avocado.

Place another piece of toast

on top and secure with skewered lemon wedge and an olive.
