Catalan Spinach

Catalan Spinach

Serves 4-6
Ingredients
- 1kg Spinach Leaves
- 2 tbsp Olive Oil
- 1 Garlic Clove, finely chopped
- 1/4 c Roasted Pinenuts
- Black Pepper, freshly ground
- 1/4 c Apricots, diced
- Salt
- 1 Red Onion, finely chopped
- Brown Brothers Red Tarrango
- 1/4 c Raisins
Method
Drop the spinach leaves into a large saucepan of boiling salted water for 3 minutes until the spinach is well wilted.
Remove from the heat, drain and rinse under cold water until cold.
Squeeze dry and chop coarsely.
Heat the oil in a large frying pan and add the onion, garlic, apricots and raisins.
Fry gently, without browning, for 10 minutes until the onions are soft.
Add the spinach and pinenuts, fry gently, stirring frequently, until everything is hot.
Remove from the heat.
Season with salt and pepper and serve. Good with roast chicken.
