Brussel Sprouts with Apples, Lemon and Garlic

Serves 4
Ingredients
- 2 Garlic Cloves, finely chopped
- 2 Garlic Cloves, finely chopped
- Zest and Juice of 1 Lemon
- Salt
- Black Pepper
- 3 tbsp Olive Oil
- 3 Large Apples, peeled, cored and sliced
- brussel sprouts
Method
1. Cook the brussel sprouts in boiling water for about 5 minutes until just tender, do not overcook. Drain and reserve the brussel sprouts.
2. Heat the oil over moderate heat and add the garlic, apple slices and lemon zest. Gently panfry until the apples are soft and lightly browned.
3. Add the sprouts and gently fry until the sprouts are hot. Add the lemon juice and season with salt and pepper.
