Beef Medallions with Barbecue Sauce

Ingredients

  • 1 pack Silver Fern Farms Beef Medallions
  • 2 Tbsp olive oil
  • Barbecue Sauce
  • 1 cup lemonade
  • 2 large tomatoes, diced
  • 1 Tbsp each: tomato paste and Worcester sauce
  • 2 large tomatoes, diced
  • 1/4 cup apple cider vinegar
  • 2 tsp mustard power
  • 1/4 tsp chilli powder

Method

Rub the medallions in oil and season to taste.

Heat a frypan or barbecue and cook over a high heat for 2½-3 minutes each side (medium-rare). Transfer to a plate, cover, and rest for 5 minutes.

To make the sauce, bring all ingredients to the boil in a saucepan. Reduce the heat and simmer for 15-20 minutes or until it thickens and starts to turn dark red.

Serving suggestion: Serve medallions on top of kumara wedges drizzled with barbecue bauce, alongside a seasonal green salad.
