Steak'n'Stilton Blankets with Chilli Lime Chips

Ingredients

  • 4 sirloin steaks
  • 100 g Stilton or Blue Cheese, crumbled
  • 1 tbsp Port
  • 100g Bacon, finely chopped
  • 2 tbsp Chilli Minced
  • Juice & Zest of 1 Lime
  • 1 tbsp Coriander, chopped
  • 2 tbsp Margarine
  • Salad greens to serve

Method

Cut a pocket into each steak.

Mix together Stilton, Bacon and Port to make a stiff paste.

Spoon paste into the pockets and secure with cocktail stick.

For The Chips:

Place potato cubes onto roasting tray, bake in a preheated 180C oven for 20 minutes or take sheet of foil and fold the edges to create a foil boat.

Add the potato cubes and place onto grill rack of a preheated BBQ and cook for 15 mins.

Beat together the chillies, juice and zest from the lime, coriander and margarine.

Spoon onto a sheet of greaseproof paper and roll up into a sausage shape, chill until required.

BBQ the steaks to your liking.

Arrange the salad greens onto serving plates.

Serve the potato cubes alongside.

Add the Steak and top with a slice of chilli lime butter.

Remove the cocktail stick.
