Ingredients

  • 1 pack Edmonds Rich Chocolate Cake Mix
  • 60 g Softened Butter or Margarine
  • 6 Eggs (size 6)
  • 190 ml Cooled Instant Coffee
  • FROSTING
  • 50 g margarine or Softened Butter
  • 1 tbsp Milk (15mls)
  • 425 g can Pitted Black Cherries
  • TOPPING
  • 2/3 cup Cream (150ml)
  • 3/4 cup Fresh Cherries to Decorate

Method

1. Preheat the oven to 160oC. Grease a 6cm deep and 20cm round cake tin and line the base with baking paper.

2. Prepare cake mix as directed, replacing water with cooled coffee.

3. Bake as directed. Once cool, cut the cake in half horizontally using a long serrated knife.

4. Bake for 60-65 minutes or until a skewer inserted into the centre of the cake comes out clean. Leave in tin for 10 minutes before turning out onto a wire rack to cool.

5. Prepare frosting as directed and spread on bottom cake later.

6. Drain can of pitted black cherries very well, scatter them over frosting and replace top cake layer.

7. Whip the cream to soft peaks and spread over the top layer. Decorate with the fresh cherries.
