Ingredients

Sauce

  • 60g butter
  • 1 white part only thinly sliced leek
  • quarter cup flour
  • 1.5 cup milk
  • 1 zest, finely grated lemon

Filling

  • 2 hard-boiled, peeled and roughly chopped egg
  • 1 medium potatoe peeled cooked and cut into 1cm cubes
  • 1 can fresh water, drained, with skin and hard bones rem salmon pink, 415g
  • 1 can fresh water, drained, with skin and hard bones rem John West salmon pink, 210g
  • 250g (defrosted, if using frozen) prawns
  • Third cup of leaves chopped parsley

Pastry

  • 2 sheets flaky puff pastry
  • 1 lightly beaten egg for brushing

Method

Preheat oven to 200ºC.

Melt butter in a saucepan over a medium heat, then add leek and cook for 5 minutes, until soft but not browned. Add flour and stir until well combined and starting to bubble.

Remove pan from heat, then slowly add milk, stirring continuously. Return pan to heat, add lemon zest and stir until the sauce boils and thickens. Remove from heat and cool.

Add filling ingredients to sauce and mix to combine. Season with salt and pepper to taste. Divide mixture between 4 x 1½ cup capacity ovenproof dishes.

Cut 4 rounds from pastry to fit over the dishes and brush edges of each dish with a little of the beaten egg. Top with a round of pastry and press the edges to secure. Brush tops of the pies with beaten egg and cut a small slit in the centre of each pie. Place on an oven tray and bake for 20 minutes, until pastry is puffed and golden.
