Haloumi, Pear, Grape and Walnut Salad

Serves 6
Ingredients
- 1 cup fresh walnut pieces
- 2 just ripe pears
- 1 lemon
- 120 g grapes (optional)
- 200 g The Collective Haloumi, sliced
- 6 handfuls (150g) fresh salad greens; we like watercress, baby spinach, rocket
- seeds of 1/2 pomegranate (optional)
- a pinch of salt and pepper
Method
Roast walnut pieces at 180°c for 12-15 minutes.
Halve and core the pears and cut each half into slices.
Place in a mixing bowl and toss gently with the juice of half the lemon.
Wash and cut the grapes in half, set aside.
Pan fry haloumi slices in a lightly greased, heavy-bottom skillet pan until golden on both sides.
In a large mixing bowl combine salad greens, pears and their juices, walnuts, grapes, pomegranate seeds, (if used) and the golden haloumi slices.
Season to taste with salt and pepper and toss gently with a simple dressing of choice.
