Ingredients

  • 1 pack Silver Fern Farms Lamb Steaks
  • Sea Salt
  • Ground Black Pepper
  • 1/4 cup Fresh Mint
  • 1/4 cup Fresh Coriander
  • 1/4 cup Parsley
  • 2 cloves Garlic, crushed
  • Zest and Juice of a Lemon
  • 1 tbsp Honey
  • 2 tbsp Olive Oil
  • Spinach Leaves, blanched (optional as garnish)

Method

In a food processor combine the herb coating ingredients. Process until smooth and massage into the lamb steaks. Cover and leave to rest for 15 minutes.

Heat a frying pan or barbecue. Cook the lamb steaks for four minutes each side. Remove to a plate. Cover with tinfoil and leave to rest for 5 minutes. Deglaze the pan with remaining marinade.

Serve on a chickpea ragout topped with the lamb steak. Drizzle pan juices over the lamb. Garnish with blanched spinach leaves.
