Nicola & Hannah’s Amazing Blob Biscuits

  • 100 g Tararua Butter (cubed)
  • 1 Cup White sugar
  • 1 Egg
  • 1/2 tsp Vanilla
  • 1 1/4 Cup Edmonds Standard Flour
  • 1 tsp Edmonds Baking Powder
  • 1 tsp Edmonds Custard Powder
  • Raspberry Jam


Pre-heat oven to 180º C, Line 2 trays with baking paper.

Beat butter and sugar in bowl until pale & creamy.

Add the eggs & vanilla and beat to combine.

Sift in the Edmonds flour, custard powder and baking powder and mix to form a firm batter.

Chill in the fridge for 5 mins.

Flour your hands, divide and roll the dough into 1-2 cm balls and place on the lined trays.

Make a small indent with your thumb in the centre of each ball. Fill indent with jam and bake in the oven for 25 mins or until light brown.

Cool and enjoy! Store in an airtight container for about a week.

Quick Tip – it’s better to mix the dry ingredients in with a spatula or spoon rather than an electric mixer.
