Chelsea’s Chocolate Pineapple Upside Down Cake

Ingredients

  • 1 Tbsp Olivani Spread
  • 1 Tbsp Brown Sugar
  • 1 Can Pineapple rings
  • 1 Cup Edmonds Standard Flour
  • 1 Tsp Edmonds Baking Soda
  • 1 Tsp Edmonds Baking Powder
  • Pinch of salt
  • 1/2 Cup Cocoa Powder
  • 1/2 Cup Pitted dried prunes, chopped in half
  • 1 Cup Black Beans
  • 3/4 Cup Brown Sugar
  • 1 Tbsp White Vinegar
  • 1 Tsp Vanilla essence
  • 1/2 Cup Olivani Olive Oil
  • 1 Tsp Cinnamon

Method

Preheat the oven to 180oC.

Place prunes, 3 pineapple rings & juice from the can in a saucepan – bring to the boil, simmer for 10 mins.

In the last 3 mins stir the mixture with a fork to create a pulp, set aside to cool.

Mix together in a cup the spread & sugar - spread this at the bottom of a round cake tin.

Place 5 pineapple rings on top of mixture.

Sieve all dry ingredients (except sugar and black beans) into a large bowl, mix in the remaining dry ingredients and all the other the wet ingredients, blend well ( use a blender or food processor to make this easier)pour mixture into the cake tin.

Bake for 45-50 mins. Leave to cool for 15 mins, before turning onto a plate – then you will have lovely pineapple rings on the ‘topside’ of your cake!

Serve with Meadow Fresh Cream either poured over or whipped, or alternatively if you like puddings hot with Meadow Fresh ready made custard.
