Chicken and Bacon Firecracker

  • 4 Boneless Chicken Breasts, sliced
  • 200g Shoulder Bacon, diced
  • 1 Small Onion, chopped
  • Cajun Seasoning to dust
  • Stirfry Vegetables to serve
  • 1 tbsp Olive Oil
  • 2 tbsp Sweet Chilli and Garlic Sauce plus 2 Tbsp Extra
  • 1 Egg, beaten
  • 1/2 c Cheese, grated
  • 1 pkt Filo Pastry
  • 1 Small Red Capsicum, chopped


Heat oil in saute pan, lightly brown chicken and bacon, add the onion and pepper. Cook 2-3 minutes. Remove the ingredients with a slotted spoon, mix with the chilli sauce and mustard. Reserve the pan juices. Lay 3 sheets of filo on top of each other, making a star shape. Spoon the fiery chicken onto the pastry. Brush edges with beaten egg. Bring up the edges and twist to encase the filling.

Repeat to make four crackers.

Place onto baking tray, brush with beaten egg and lightly dust with Cajun seasoning. Bake at 200c for 10-15 minutes. Meanwhile, heat the reserved juices together with the extra chilli sauce. Stirfry the vegetables and serve.
