Caribbean Spiced Pork with Caramelised Apple

Serves 4
Ingredients
- 1 tbsp Sugar
- 2 tbsp Tomato Chutney Sauce
- 3 Spring Onions
- 2 tbsp Soy Sauce
- 1 tbsp Jerk Seasoning 1/2 tsp mixed spice, cinnamon, nutmeg, 1 tsp chilli seasoning, crushed garlic
- 4-6 Pork Loin Chops
- 1 Apple, peeled cored and sliced for marinade plus 1 cored and sliced into rings
Method
Mix together all the marinade ingredients, add the pork, marinate for 2 hours minimum, overnight if possible.
Remove the pork from the marinade, place onto a hot barbecue.
Cook for 4-5 minutes each side, turning occasionally.
Place the marinade into a saucepan. Add the tomato sauce.
Simmer to create a thick, hot glaze.
Brush a little over the apple rings.
Place onto a barbecue, cook for 2-3 minutes each side until slightly softened.
Serve the apples on top of the pork, add a little glaze.
Serve with crisp green salad.
