1. Preheat oven to 180°C (160°C fan-forced). Grease a 12-hole muffin pan.
2. Place cauliflower in a microwave safe dish with just enough water to cover the bottom of the dish. Cover with a paper towel and microwave on high for 4 minutes. Allow to cool and roughly chop into pieces.
3. In a medium bowl combine cauliflower with remaining ingredients. Spoon mixture evenly into prepared pan.
4. Bake for 15 minutes, or until firm.
5. Transfer to a wire rack to cool.
Fresh Tip: You could use broccoli instead of cauliflower, or half and half.
