Warm Potato and Swiss Sausage Salad

Ingredients

  • 4 Cheese Viennas, sliced
  • Gherkins
  • Small Clove Garlic, finely chopped
  • 3 tbsp Parsley, chopped
  • 1/4 c Olive Oil
  • 800g Washed Gourmet Potatoes, halved
  • 1tbsp Capers
  • 3 tbsp Wine Vinegar

Method

Panfry sausages in a little olive oil until hot and browned, thinly sliced

salt and freshly ground black pepper to taste

Boil the potatoes in salted water until tender.

Drain and allow to steam dry.

Put everything into a large salad bowl and mix gently.
