Winter Porridge with Spiced Dried Fruit Compote

Ingredients

  • 100g Apricots, dried
  • 50g Cranberries, dried
  • 4 Cloves, whole
  • 1 Lemon
  • 1 L (4 cups) Vitasoy Calci-Plus High Fibre
  • Pinch of salt
  • 1/2 c (130g) Greek Yoghurt, to serve
  • 2 Cinnamon Sticks
  • 150g Figs, dried
  • 1/2 c (100g) Caster Sugar
  • 2 c Rolled Oats

Method

Bring 1 Cup water and the sugar to the boil in a medium saucepan.

Add the figs, apricots, cranberries, cinnamon, cloves and 2 strips of lemon rind.

Reduce the heat and simmer for 10 minutes or until the fruit is soft and plump.

Juice the lemon and add to the pan.

Set aside to cool slightly.

Place the oats, Vitasoy Calci-Plus High Fibre and salt in a medium saucepan.

Bring to the boil, then reduce heat to medium and cook, stirring for 10 minutes or until the porridge thickens.

Serve the porridge with the dried fruit compote and yoghurt.
