Bacon, Cheese & Courgette Muffins

  • Serves 12

Ingredients

  • Rashers streaky bacon, chopped - 6
  • Small onion, finely chopped - 1
  • Courgettes, grated - 2
  • Flour - 2 cups
  • Baking powder - 3 tsp
  • Grated tasty cheddar cheese - 1 cup
  • Egg, whisked - 1
  • Butter - 50 g
  • Milk - 1 1/2 cups

Method

  1. Preheat the oven to 200°C.

  2. Place the bacon, onion and courgettes in a small frying pan and cook over a gentle heat until the onion is tender.

  3. Place the flour, baking powder, bacon mixture and cheese in a bowl and make a well in the centre. Pour in the egg, softened butter and milk and gently mix until just combined.

  4. Spoon the mixture into muffin pans and bake for 12-15 minutes until puffed and golden.
