Surimi Pasta Salad
- Penne Pasta - 200 g
- Cherry tomatoes, halved - 1 cup
- Kalamata olives - 1/2 cup
- Handful Rocket Leaves - 1
- Zest and Juice of 1 Large Lemon
- Spring Onions, thinly sliced - 3
- Roasted almonds, chopped - 1/2 cup
- Surimi Salad Mix, thinly sliced - 250 g
- Black Pepper, freshly ground to taste
In a large saucepan, heat salted water and boil the pasta until al dente. Drain, and toss with 4 tablespoons of olive oil. Set aside to cool.
Combine pasta with all the other ingredients in a large salad bowl and toss well, seasoning to taste with salt and pepper.
