Surimi Pasta Salad

Surimi Pasta Salad

  • Serves 4-6

Ingredients

  • Penne Pasta - 200 g
  • Cherry tomatoes, halved - 1 cup
  • Kalamata olives - 1/2 cup
  • Handful Rocket Leaves - 1
  • Zest and Juice of 1 Large Lemon
  • Spring Onions, thinly sliced - 3
  • Roasted almonds, chopped - 1/2 cup
  • Surimi Salad Mix, thinly sliced - 250 g
  • Salt
  • Black Pepper, freshly ground to taste

Method

  1. In a large saucepan, heat salted water and boil the pasta until al dente. Drain, and toss with 4 tablespoons of olive oil. Set aside to cool.

  2. Combine pasta with all the other ingredients in a large salad bowl and toss well, seasoning to taste with salt and pepper.
