- Milk - 1/2 cup
- Sugar - 2 Tbsp
- Yeast - 2 tsp
- 1 egg and 2 yolks
- Butter, melted - 80 g
- Flour - 2 1/2 cups
- Salt - pinch
- Egg, whisked with a fork - 1
- Sesame seeds - 1 Tbsp
In a small saucepan, warm the milk and sugar until lukewarm. Remove from the heat and sprinkle over the yeast leaving it to sit for 10 minutes or until frothy. Stir through the eggs and melted butter.
Into a large bowl add the flour and salt. Pour in the yeast mixture and stir to combine. Place dough onto the lightly floured bench and knead for 10 minutes.
Place dough into a lightly greased bowl, cover and put in a warm place for 2 hours or until doubled in size.
Remove the dough and knead for 2 minutes on the bench, then roll into six even sized buns. Place onto a lined oven tray leaving in a warm place for 1 hour or until doubled in size again.
Preheat an oven to 180°C (160°C fan-forced)
Brush the tops of the brioche with egg and sprinkle with seeds before baking for 20 minutes. Cool on a wire rack.
