With the combination of the salty chorizo and the sweetness of capsicum, this recipe for Chorizo & Capsicum Gnocchi is a pasta dish that will have you coming back for more.

Ingredients

  • Pre-made gnocchi - 500 g
  • Oil - 1 Tbsp
  • Red onion, thinly sliced - 1/2
  • Small red capsicum, sliced - 1
  • Chorizo, thinly sliced - 2
  • Jar of pasta sauce - 400-500 g
  • Salt, to season
  • Pepper, to season
  • Fresh basil, to serve

Method

  1. In a large pot, bring lightly salted water to the boil.

  2. Add gnocchi, and cook for 6 to 8 minutes or until tender. The gnocchi will rise to the surface once cooked. Drain, reserving 1/4 cup of the liquid.

  3. In a large frying pan, heat the oil, and cook the onion and capsicum for 2-3 minutes or until it begins to soften. Add the chorizo and cook for a further 2-3 minutes or until the chorizo begins to brown.

  4. Add the gnocchi, pasta sauce and reserved water to the pan. Season and stir together to combine.

  5. Allow to simmer for 5 minutes before serving. Serve with fresh basil.
